My education is obviously lacking.<BR/><BR/>Smaltz is rendered chicken fat. According to a friend who is New York Jewish, she saves the fat that you normally tear off raw chicken and freezes it. When she gets a big enough clump, she thaws the fat and gently melts it in a pan. You pour off the melted smaltz and throw any remaining bits away.
