"Espresso" Yourself



Our Dining Room Mismanagement instructor was absent today, and we had our Chef instructor from last quarter filling in for us. We were supposed to start working on the joys that the service of alcohol bring and what responsibilities go along with that, but since this was sort of an unexpected absence, we ditched that plan and went for the talking about the service of coffee...demo and hands-on work with the espresso machine in the cafe.

Whee! Free espresso and cappuccino--what more could you ask for? Besides a super caffeine rush and realizing that maybe the doctor told you that people with high blood pressure really needed to watch their caffeine intakes For A Reason! Wonder what my BCC (Blood Caffeine Content) level was? Off the chain, I'm sure.

But, the best part of the Tuesday class is that the Regional Cuisines class is going on next door, and they are always cooking up something yummy. Today's regional dishes were from Italy. We got to try some osso buco, a risotto, a shrimp Provencale dish, grilled fennel (very mild and tasty), some grilled squid, and stuffed zucchini blossoms. Those were fantastic, if a bit messy. They were stuffed with a ricotta mixture and were pretty darn tasty. This is the class that will be doing the food for our lunch service on Tuesdays, and I must say that I've been pretty impressed so far, along with being well-fed.

Tomorrow is the first day of training for the new job. I'm scooting over to Super Suppers right after my morning class, and training is going on until 8:30 pm. I have a feeling I'm going to need a double foot transplant before this quarter is done.
